Tender-Ass Meat Packets
4 8-10 ounce game meat steaks from shoulder or leg, or duck or pheasant thighs and legs
1 1/2 cups Tuley Brothers Bad Ass Marinade (divided)
1 medium onion, thick sliced
8 ounces mushrooms, sliced
8 slices bacon, diced
1. Place meat, marinade and onion in a zipper bag and refrigerate overnight, turning at least once. Preheat grill to medium-high. Lightly pat meat and onion dry with paper towels and season with salt and pepper. Discard used marinade.
2. Grill meat and onions for 8-10 minutes, until the bottom is well-seared. Turn with tongs and sear the other side.
3. Make 4 packets for grilling: on each double layer of foil, place one piece of meat, ¼ of the onions, ¼ of the mushrooms, and 2 slices of diced bacon. Drizzle with 2 tablespoons Tuley Brothers Marinade, sprinkle with salt and pepper, and seal the packets.
4. Move the coals to one side of the grill and place the packets on the other side. Cover the grill and cook indirectly for 1 – 1 ½ hours, depending on thickness of meat.
